28 oz can chickpeas - drained and rinsed
1 small bell pepper - chopped (about 1 cup)
1 cup grape tomatoes - halved or chopped
4 oz feta cheese - cubed or crumbled
¼ cup fresh parsley leaves - finely minced
¼ cup fresh mint leaves - finely minced
1 scallion (green onion) - chopped
1 garlic clove - minced or grated
1 tablespoon lime juice - (from ½ lime)
2 tablespoons extra virgin olive oil (Kasadrinos **FREE Bottle**)
Salt & pepper to taste - (about ¼ teaspoon each to start)
Chop all the veggies to be about the same size as the chickpeas. Combine all the ingredients in a large bowl and mix well. Chill for 10 minutes before serving.
