1 Zucchini
2 Bell peppers I used a combination of red and yellow bell pepper
1 small head broccoli
1 medium red onion
Marinade
1 teaspoon Smoked paprika
1 teaspoon garlic granules
1 teaspoon Herb de provence
Salt and pepper
1½ tablespoon extra virgin olive oil (I use Kasandrinos)
2 tablespoon Lemon juice
Wash the vegetables, deseed the bell peppers and chop the rest of the veggies into equal sizes.
Transfer to a large mixing bowl, then sprinkle the smoked paprika over, garlic granules, Herb de Provence, salt and pepper, olive oil and lemon juice and mix to combine. Leave to marinate for 15 to 30 minutes (This step is optional)
Preheat the air fryer at 200C/400F for 3 minutes.
Transfer the marinated vegetables to the air fryer basket and spread them out. Cook for 10 to 15 minutes shaking the air fryer basket every 4 to 5 minutes until tender, crunchy and perfectly roasted. Serve!
