Avocado Gazpacho (Recipe)


✅ 2 cups salsa verde, (mild or medium) 16 oz jar

✅ 1 cucumber, peeled, seeds removed, roughly chopped

✅ 1 avocado, roughly chopped

✅ salt, to taste

✅ optional toppings such as lime wedges, diced cucumber, avocado, red onion, roasted corn, or fresh cilantro.


1️⃣ Add the salsa verde, cucumber, and avocado to a blender. Blend until very smooth.

2️⃣ Cover and refrigerate for at least an hour.

3️⃣ Taste and add salt, as needed. Serve with your favorite toppings.
