Chicken and Chickpea Salad with Fresh Basil Dressing (Recipe)


Ingredients

Dressing:

✅ 1 cup extra virgin olive oil

✅ 3 garlic cloves, mashed

✅ 1 bunch fresh basil, chopped

✅ 2 tablespoons mustard

✅ Salt and pepper (to taste)


Salad:
✅ 1 pound poached chicken breast, cubed

✅ 1-28 ounce can garbanzo beans, drained and rinsed

✅ 10 walnuts, halved

✅ 10 cherry tomatoes

✅ 10 black olives, pitted

✅ 6 sun-dried tomatoes, chopped

✅ 1 head romaine lettuce, chopped

Instructions


1️⃣ Combine all ingredients for dressing in a bowl. Mix well.


2️⃣ Add all salad ingredients in another bowl. Add preferred amount of dressing. Mix well and serve.
