Dressing:
1 cup extra virgin olive oil
3 garlic cloves, mashed
1 bunch fresh basil, chopped
2 tablespoons mustard
Salt and pepper (to taste)
Salad: 1 pound poached chicken breast, cubed
1-28 ounce can garbanzo beans, drained and rinsed
10 walnuts, halved
10 cherry tomatoes
10 black olives, pitted
6 sun-dried tomatoes, chopped
1 head romaine lettuce, chopped
Combine all ingredients for dressing in a bowl. Mix well.
Add all salad ingredients in another bowl. Add preferred amount of dressing. Mix well and serve.
