Chickpea Feta Salad (Recipe)


✅ 28 oz can chickpeas - drained and rinsed

✅ 1 small bell pepper - chopped (about 1 cup)

✅ 1 cup grape tomatoes - halved or chopped

✅ 4 oz feta cheese - cubed or crumbled

✅ ¼ cup fresh parsley leaves - finely minced

✅ ¼ cup fresh mint leaves - finely minced
✅ 1 scallion (green onion) - chopped

✅ 1 garlic clove - minced or grated

✅ 1 tablespoon lime juice - (from ½ lime)

✅ 2 tablespoons extra virgin olive oil (Kasadrinos **FREE Bottle**)

✅ Salt & pepper to taste - (about ¼ teaspoon each to start)


1️⃣ Chop all the veggies to be about the same size as the chickpeas. Combine all the ingredients in a large bowl and mix well. Chill for 10 minutes before serving.
