1 can chickpeas, 400g/14oz
1 can corn kernels, 400g/14oz
1 cucumber, medium
1 red pepper, small
200 g cherry tomatoes
100 g Greek feta
⅓ cup flat leaf parsley, chopped
Dressing
3 tbsp olive oil, extra virgin
2 tbsp lemon juice
1 garlic clove, crushed
salt, to taste
pepper, to taste
Open and drain canned chickpeas. Give chickpeas a rinse under water before using.
Open and drain canned corn.
Chop cucumber into small pieces.
Cut cherry tomatoes into halves.
Slice and cut bell peppers into bite size pieces.
Roughly chop parsley
Dressing
Shake until well combined.
Assemble
Enjoy!!!
