Chickpea Salad (Recipe)


Ingredients

✅ 1 can chickpeas, 400g/14oz

✅ 1 can corn kernels, 400g/14oz

✅ 1 cucumber, medium

✅ 1 red pepper, small

✅ 200 g cherry tomatoes

✅ 100 g Greek feta
✅ ⅓ cup flat leaf parsley, chopped


Dressing

✅ 3 tbsp olive oil, extra virgin

✅ 2 tbsp lemon juice

✅ 1 garlic clove, crushed

✅ salt, to taste

✅ pepper, to taste


Instructions


1️⃣ Open and drain canned chickpeas. Give chickpeas a rinse under water before using.


2️⃣ Open and drain canned corn.


3️⃣ Chop cucumber into small pieces.


4️⃣ Cut cherry tomatoes into halves.


5️⃣ Slice and cut bell peppers into bite size pieces.


6️⃣ Roughly chop parsley


Dressing

  • In a mason jar, add extra virgin olive oil, lemon juice, garlic, salt and pepper.

Shake until well combined.


Assemble

  • 1. In a large bowl, add all the salad ingredients except for feta.
  • 2. Pour dressing on top and toss to combine.
  • 3. Crumb feta on top of salad and gently toss it through.
