Easy Quinoa Tabbouleh (Recipe)


Ingredients

✅ 1/2 cup quinoa

✅ 1 bunch parsley

✅ 10-15 leaves mint

✅ 2 vine tomatoes

✅ 1/2 English cucumber

✅ 1 lemon
✅ 3 Tbsp olive oil

✅ 1/2-3/4 tsp sea salt

✅ 1/2 tsp freshly ground black pepper


Instructions


1️⃣ Bring quinoa, 1/2 tsp. salt, and 1 1/4 cups water to a boil in a medium saucepan over high heat. Reduce heat to medium-low, cover, and simmer until quinoa is tender, about 10 minutes. Remove from heat and let stand, covered, for 5 minutes. Fluff with a fork.


2️⃣ While quinoa is cooking, wash, dry, and destem herbs and chop finely.


3️⃣ Wash and dice cucumber and tomatoes and add to the herbs.


4️⃣ Add 1 cup cooked quinoa, juice of lemon, olive oil, sea salt, and pepper.


5️⃣ Mix well and serve.
