Lemon Asparagus Pasta (Recipe)


✅ Fresh asparagus

✅ Pasta: Rotini, penne, or your favorite shape

✅ 2 cloves garlic, minced

✅ Lemon

✅ Salt and pepper

✅ 1 cup grated Parmesan cheese


1️⃣ Cook the asparagus a few minutes until the spears are tender and bright green.

2️⃣ Using tongs, immediately remove the asparagus from the water and place in a bowl of ice water to stop them from cooking.

3️⃣ Cook the pasta according to the package directions. Meanwhile, in a bowl, combine lightly stir in lemon zest, lemon juice, Parmesan cheese, olive oil, salt, and black pepper until thoroughly combined.. Drain the pasta, then return it to the pot along with the sliced cooked asparagus. Pour in the sauce.

4️⃣ Toss well to coat. Taste and add salt and pepper, as desired.
