⅓-½ cup steel cut oats
1 cup water
¼ tsp salt
½ tsp dry thyme
1 lemon, zest only
2 tsp extra virgin olive oil
2 tbsp chopped fresh herbs such as parsley or arugula
Extra virgin olive oil
1/4 cup water
1 lemon, juice of
Cook oats in water, salt, and thyme according to package directions. Once most of the water is absorbed, remove from heat and stir in the lemon zest, olive oil, and herbs. Transfer to a bowl and enjoy.
1 cup unsweetened full fat yogurt
2 tsp dark molasses (honey or maple syrup are delicious as well)
¼ cup chopped nuts or seeds
Stir together yogurt, molasses, and nuts together in a bowl and enjoy. I like to have a serving of fruit on the side.
1 slice good quality bread
2 tbsp tahini
1 tsp molasses (or honey, maple syrup)
Optional toppings: nuts, seeds, berries
Toast bread then spread on tahini. Drizzle on molasses and add optional toppings. Enjoy.

½ avocado, mashed
2 tbsp unsweetened plain yogurt
½ tsp herbed garlic salt
1 tsp extra virgin olive oil
1 lemon wedge, juiced
Toast bread then spread on mashed avocado. Top with the yogurt, salt, olive oil, and lemon juice.
Enjoy.
