1/2 cup frozen chopped or leaf spinach, thawed
1 cup of crumbled feta cheese
1 cup of marinated artichokes, undrained
1/2 tsp ground black pepper
Microwave the spinach in a small, microwave-safe bowl for two minutes on high.
Place the feta cheese, artichokes, spinach, pepper, and olive oil into your food processor. Process for 1 1/2 – 2 minutes, until everything is chopped and well mixed. (You want the dip to be chunky, not totally smooth.)
