675 gram (1½ pounds) mixed vegetables (courgettes, red, yellow and green peppers, onions, asparagus and aubergines)
12 oz Campari tomatoes, grape or cherry tomatoes
10-12 large garlic cloves peeled
2 tablespoons olive oil
1 tsp dried thyme
Salt and pepper
Freshly grated Parmesan cheese for serving optional
Crushed red pepper flakes optional
Preheat the oven to 425 degrees F.
Cut vegetables into 2.5cm (1") chunks, place into a bowl and coat with oil
Spread vegetables onto large baking tray and cook for 30-35 minutes, or until cooked
