Roasted Mediterranean Vegetables (Recipe)


✅ 675 gram (1½ pounds) mixed vegetables (courgettes, red, yellow and green peppers, onions, asparagus and aubergines)

✅ 12 oz Campari tomatoes, grape or cherry tomatoes

✅ 10-12 large garlic cloves peeled

✅ 2 tablespoons olive oil

✅ 1 tsp dried thyme
✅ Salt and pepper

✅ Freshly grated Parmesan cheese for serving optional

✅ Crushed red pepper flakes optional


1️⃣ Preheat the oven to 425 degrees F.

2️⃣ Cut vegetables into 2.5cm (1") chunks, place into a bowl and coat with oil

3️⃣ Spread vegetables onto large baking tray and cook for 30-35 minutes, or until cooked
