1 lb. raw shrimp, small size
salt and pepper
1 tsp Extra virgin olive oil
8 oz orzo pasta (whole wheat) or your choice, cooked according to package instructions
1 English Cucumber, diced
2 cups cherry tomatoes, halved
½ cup purple onion, chopped
¾ cup feta cheese, crumbled
⅓ cup curly leaf parsley, finely chopped
Dressing
Pat shrimp dry with paper towels and then season with salt and pepper on both sides. Heat a skillet over medium-high heat and add olive oil. Once hot, add shrimp and cook just until pink and cooked through. Remove from heat and let cool. Coarsely chop shrimp and set aside.
Cook orzo pasta according to package instructions, then drain and let cool. Add pasta to a large bowl with the cucumber, tomatoes, onion, feta cheese and parsley. Add in the cooked shrimp.
