Spinach Tomato Egg Muffins (Recipe)


✅ 6 eggs

✅ 10-12 oz bag frozen spinach, thawed one bag

✅ 1/3 cup green onion (chopped) (optional)

✅ ¼ cup milk (optional)

✅ 1/3 cup feta cheese

✅ 1/8 tsp garlic powder

✅ 1/8 tsp onion powder

✅ 3 cherry tomatoes
✅ 1 Tbsp
extra virgin olive oil (I use Kasadrinos)

✅ ½ tsp salt

✅ 1 pinch pepper


1️⃣ Chop the green onions, spinach & tomatoes and put everything in a larger bowl.

2️⃣ Add the eggs, milk and spices to the bowl and mix thoroughly with a whisk.

3️⃣ Preheat your oven to 300°F/150°C.

4️⃣ Spread your egg mixture over 6 molds of a silicone muffin pan  or muffin pan.

5️⃣ Crumble the feta cheese over your egg muffins before putting them in the oven.

6️⃣ Bake your spinach & tomato egg muffins for about 25 minutes in your preheated oven.
