Stuffed Acorn Squash w/ Lentils (Recipe)


Ingredients

✅ 3 medium acorn squash, cut in half lengthwise and seeded

✅ 1 tablespoon + 1 teaspoon olive oil, divided

✅ Salt and pepper, to taste

✅ 15-ounce can cooked black lentils, rinsed and drained

✅ ¼ cup walnuts

✅ 4 cups arugula
✅ 2 tablespoons raw honey

✅ 1 lemon, zested

✅ Salt and freshly cracked black pepper, to taste


Instructions


1️⃣ Preheat oven to 425 degrees F. 


2️⃣ Brush squash with 1 teaspoon olive oil and sprinkle with salt and pepper, to taste. Place squash cut side down on a parchment-lined baking sheet and bake until fork-tender, about 35-45 minutes.


3️⃣ Remove from the oven and let cool slightly. To serve, place 1 cup arugula on a plate, then top with the roasted acorn squash. Sprinkle with the black lentils, walnuts, drizzle of honey, lemon zest, salt and pepper.
