1 lb zucchini, cut into 1 inch slices
2 tsp extra virgin olive oil
1 cup onions, shredded
1 cup parsley leaves, chopped
3 fresh tomatoes, grated
salt and pepper, to taste
4 eggs
Add zucchini, olive oil, onions, parsley, tomatoes and 1 cup of water to a small pot. Simmer for 20 minutes and salt and pepper to taste.
Beat the eggs and add to the pot. Cook for an additional 10 minutes.
