Salmon Cakes with Caper Mayonnaise

 

This easy 30 minute Salmon cake is the perfect quick weeknight dinner. To complete your meal try pairing with a side of rice or steamed asparagus, don’t forget to top your salmon cake with our caper mayonnaise.

Ingredients

1 egg white, beaten

2 tablespoons chopped green onion

1 tablespoon lemon juice

1 tablespoon Dijon-style mustard

¼ teaspoon salt

¼ teaspoon ground black pepper

14 to 16 ounces cooked salmon, flaked

½ cup crushed saltine crackers with unsalted tops (about 14 crackers)

Caper Mayonnaise:

¼ cup light mayonnaise

2 teaspoons capers, drained

1 teaspoon lemon juice

¼ teaspoon ground black pepper

3 to 4 teaspoons fat-free milk

Finely shredded lemon peel (optional)
